I love Vegetable chutneys.  I normally try new vegetable chutney by making it for my lunch. Asparagus is one of the vegetable I don’t know how to cook (other than simple stir fry). I was thinking about it.. Suddenly thought why not make a chutney. It came out extremely well.


Ingredients:


Asparagus – 200g
Tomato – 2
onion – 1
bengal gram dhal – 2 teaspoon
mustard seeds – 1/4 teaspoon
urad dhal – 1 teaspoon
curry leaves – 10-15
Coconut – 2 tablespoon
Green chillies – 3-5 (adjust to your spice level)
Oil – 3 teaspoon

Method to make chutney

Heat the kada. Add 2 teaspoon of oil. Add Bengal gram dhal and fry till it is brown in color. Add onion and fry till it is soft. Add tomato and fry till it is mushy. Add green chillies, coconut and asparagus and fry till asparagus is cooked. Switch it off and let it cool down.

When it is fully cool down transfer to blender and grind to smooth paste. Head the kada and add oil when it is hot add mustard seeds when it starts to pop add urad dhal and curry leaves. Fry till it is brown in color. Add this back to chutney and mix well.

Serve it with idli or dosa
