This is one of the recipe I saw in mallika badrinath in my early days after marriage. I was not sure how it would taste.. I kept it aside and didn’t even try it out. In my last trip to India I had this at a restaurant and it was pretty good. So I had decided to try it out. Even though I referred the recipe in the book I followed my own in the end. I have added cashew paste but you can replace it with almond too. This will go well with Naan, Jeera rice, pulka or roti
Ingredients
For Kofta
Khoya – 1 cup
Rava (semolina) – 2 tablespoon
Maida – 2 tablespoon (heaped)
Salt a pinch
Oil for Deep fry
For Gravy
Onion – 2 (medium size)
Tomatoes – 2 (medium size)
Garlic – 4 pods (peeled and chopped)
Ginger – 1/2 inch (finely chopped)
Cashew – 10 (Soaked in hotwater)
Red chilli powder – 1/2 to 1 teaspoon (adjust to spice level)
Coriander powder – 2 teaspoon
Garam masala – 1/2 teaspoon
Turmeric powder – 1/2 teaspoon
Cumin seeds powder – 1/2 teaspoon
Oil/ Ghee – 4 teaspoon
Cumin seeds – 1 tablespoon
Milk – 1/2 cup
Coriander leaves – 1 tablespoon (chopped)
Method:
First let’s do Kofta take all ingredients under kofa except oil and knead to smooth dough. Leave it aside for 10 mins
Knead again. Make small marble size balls. Heat oil for deep fry
When the oil is hot (no need to be smooking hot) reduce flame and add koftas. Fry till all sides are cooked
Drain extra oil and take it out. Leave it on kitchen tissue paper. Keep it aside
Heat 2-3 teaspoon of oil / Ghee. Add Ginger, garlic and fry till slight brown in color. Add onion, salt and fry till transparent.
Add Tomatoes fry till mushy. Add Garam masala powder, turmeric powder, cumin powder, coriander powder and chilli powder. Mix well Fry till raw smell goes off. Switch it off. Let it cool down
Grind to smooth paste.
Grind cashew into smooth paste
Heat rest of oil in a pan. Add Cumin seeds let it crackle. Add grinded onion tomato paste. Add required water, salt and let it boil.
Add Grinded Cashew, Milk and adjust water.
Let it boil for 2 mins. Add fried kofta and mix well. Let it boil till desired consistency reached. (Normally once switch off it will get thicker)
Add coriander leaves and switch it off. Enjoy!
