I have posted Theeyal recipe in my space. It is using fresh spices. Also one of my Chitti’s most special dish. I love the taste of it. Perfect with hot steamed rice. So whenever I visit her this is a must. Recently I have seen simple versions of Theeyal in books. So I decided to try it out. It is quite simple and less time consuming than my theeyal recipe. Both tasted slightly different. Even though I like my Theeyal version my rest of the family liked this one. As usual I made it a day before (make sure flavour is fully absorbed) and served with hot steamed brown rice.
Ingredients:
Ladies Finger / Vendakkai – 10 pcs
Garlic – 7-10 Pods
Small onions / shallots – 7 (slice it into 2)
Coconut – 1/2 cup
Turmeric powder – 1/2 teaspoon
Coriander powder – 1.5 teaspoon
Red chilli powder – 1 teaspoon
Tamarind – 1 marble size ball (make it into 3 cup water)
Curry leaves – 10
Jaggery – 1 teaspoon
Coconut oil – 2 tablespoon
Mustard seeds – 1 teaspoon
Cumin seeds – 1 teaspoon
Fenugreek seeds – 1/8 teaspoon
Hing/ Asafoetida – 1 generous pinch
Salt
Method:
Heat a pan add coconut and fry till slight brown color. Add onion, turmeric powder, chilli powder, coriander powder.
Fry till nice aroma released. Switch it off and let it cool down.
Grind to smooth paste. Keep it aside.
Heat pan with coconut oil. Add Mustard seeds, Cumin seeds and let it crackle. Add Fenugreek seeds, Hing, curry leaves. Fry for 20 sec. Add Garlic, Shallots. Fry for 2 mins in medium flame. Add Ladies finger. Fry for 2 mins.
Add Tamarind water, Salt. Let it boil till raw smell released. Add Grinded paste and required water. Let it boil
Add Jaggery and boil it for another min
Switch it off. And Enjoy!
