I never thought of making Puli kulambu / Kara Kuzhambu with Sweet potato till I had tasted this in one of buffet at Chennai ITC hotel. It was a perfect blend of flavours. I immediately added to my list of things to try. When I made it my entire family loved it. Sweet potato with Sambar powder & tamarind tasted amazing. I have used homemade sambar powder. Any curry powder will work. I have used Sesame oil for seasoning. It goes well with hot steamed rice. Orange sweet potato works well for this. This is simple enough even bachelors / beginners can try
Ingredients
Tamarind – Small Lemon size
Sweet potato – 2 (peel and cut into 2 inch cubes)
Tomatoes – 1 (chopped)
Small onion / Shallots – 10
Garlic – 10 (small variety)
Coconut – 1 cup
Oil – 1 tablespoon (Sesame oil)
mustard seeds – 1/2 teaspoon
Curry leaves – 10
Red chillies – 2
Fenugreek seeds – 1/8 teaspoon
Hing – 1/8 teaspoon
Urad dal 1 teaspoon
Bengal gram dal – 2 teaspoon
Jaggery – 1/2 teaspoon
Salt to taste
Turmeric powder – 1/2 teaspoon
Sambar powder – 1.5 teaspoon to 2 teaspoon
Method:
Add hot water to tamarind and make tamarind paste (2 cups). Dry roast Coconut till brown in color. Let it cool down. Grind to smooth paste. Keep it aside
Heat oil in pan. Add Mustard seeds let it pop. Add curry leaves, Red chillies, Urad dal, Bengal gram dal, Hing and fenugreek seeds. Add onion and garlic. Fry till transparent
Add turmeric powder, Sambar powder fry for 1 min.
Add Tomatoes and Fry for 1 min. Add Cubed Sweet potato Fry for 30 sec.
Add Water, salt and close with lid and cook it. When 1/2 done add tamarind water. Let it boil.
Add grinded coconut paste. Continue to boil for 10 mins in medium flame
Add Jaggery and continue to boil till desired consistency
