Pesto is one of my go to in making my meals. I have made pasta, rice or korma with that. It tasted amazing & it was super hit in our family. So when I had 1 bitter gourd in the fridge, first thing that came to my mind is to do bittergourd pesto. I wanted to try out the pesto first and if comes out well then we can try with pasta. It came out so well that it got finished before I could have my meal. I have tried this a few times after that
Ingredients
For Pasta:
Pasta / Macaroni – 1 cups (cooked)
Onion – 1/2 (choppped finely)
Oil – 1 teaspoon
Garlic – 2 pods (finely chopped)
For Pesto
Bittergourd- 1 small
Garlic – 4 Pods
Small Onion / Shallots – 5
Almonds – 10
Olive oil – 1 tablespoon
Coriander leaves – 1/4 cup
Green chillies – 2
Coconut – 1/4 cup
Salt to taste
Method:
Cook the pasta / Macaroni per instruction on the package. Drain it and keep it aside
Divide Bitter gourd and remove the seeds. slice them thinly and add salt and keep it aside for 30 mins.
Squeeze the extra water and place it under heavy weight for 1 hr. And remove the excess water.
Grind bittergourd, Coconut, Garlic, Shallots, Green chillies, Almonds, Olive oil, salt and Coriander leaves into smooth paste. Grind to smooth paste. . Keep it aside
Heat the pan with teaspoon of oil. Add chopped onion and garlic. Fry till brown color and add grinded paste. Fry till raw smell goes off.
Add cooked pasta and mix well. Cook for another 3-5 mins. Add 2 tablespoon of cheese. Mix well.
Serve hot
