I love to try different pesto based pastas.. This helps to sneak in vegetables and easily convert junk kids food into healthy option. Since my kids have only one meal at home during weekdays I try to make a balanced meal for dinner. Everyday feeding them with healthy options is not going to fly so I need to find a way to include vegetables / Legume into their favourite dish. This is perfectly fit into my requirement.
Ingredients:
For Spinach pesto sauce
Spinach – 4 cups packed (washed)
Garlic – 8 cloves
Olive Oil – 1 tablespoon
Parmesan cheese – 1/4 cup
Almond – 1 tablespoon
Coriander leaves / Cilantro – 3 tablespoon
salt to taste
sugar – 1/4 teaspoon
Shallots / small onion – 5-7
Lemon juice – 2 teaspoon
pepper powder – 3/4 teaspoon
mixed Italian herb – 1/4 teaspoon
Pasta:
Pasta – 500g
Cooked Chickpeas – 1/2 cup
Olive oil – 2 teaspoon
Method:
To make Sauce:
Clean and roughly chop the spinach. cook it with Garlic, salt and sugar. Switch it off and let it cool down
Make a puree with Almond, coriander leaves, small onion. Rest of olive oil and Parmesan cheese. Keep it aside.
Cook the pasta per instructions. Cook chickpeas.
add cooked lemon juice, chickpeas, pepper powder, mixed herb with pureed spinach.
Keep it aside
Pasta:
Heat pan and add 2 teaspoon of olive oil add spinach sauce and fry for 2 mins. Now add cooked chickpeas and cooked pasta. Mix well. Cook for another 2 mins.
Serve hot
