Palak Moong Dal Vada Snack Recipe

I always for snacks which added with vegetables.. Even though my kids are not that fussy when comes to eating vegetables I still take any opportunities to include vegetable as most of the school days they have lunch at school. This vada is really addictive and crispy.. This can be good starter or snacks for after school / work.
Ingredients:


Split yellow dal / Moog dal – 1 cup
Chopped palak/ Spinach – 2 cups
Salt to taste
Green chillies – 3-5 (adjust to your spice level)
baking soda – a pinch (optional)
Cumin seeds – 1/2 teaspoon
Lemon juice – 1/2 teaspoon
asafoetida – 2 pinch
Curry leaves – 10 (optional)
Coriander leaves – 2 tablespoon (optional)
Mint leaves – few (Optional)
Oil for deep frying

 

Method:

Wash and soak moong dal for 1-2 hours. Take drain dal, Green chllies, Salt in blendar / food processor.  Make thick coarse paste

Add rest of ingredients except oil (Coriander leaves, curry leaves, asafoetida, mint leaves, Palak, baking soda, Lemon juice) to make thick batter

Heat oil in the deep frying pan. Take a small spoon and drop small small balls into the hot oil (you can use your fingers too) and fry them until all sides becomes golden brown.

Remove Vada/Pakodas from oil and leave it on kitchen tissue to drain extra oil, Repeat the process

Serve hot with favourite dip
