Boondi Ladoo Recipe – Boondi Laddu – How to make boondi ladoo – Diwali Sweets Recipes – Festival recipes – Pooja Recipes

Boondi ladoo is my mum’s specialty. My husband loves home made ladoos / Laddu. However myself and my kids are not a big fan of it. So I was looking for opportunities to make it. This time When I was in India we had small reunion and lot of my nieces and nephews were there. Since Chota Bheem is very famous among them they all love ladoo. My mum made ladoos and I took the opportunity to take stepwise pics too. My mum measurements are by eye 🙂 i asked her to keep all the ingredients according to her measurement and I measured again using cup.. My mum had boodhi laddle if you don’t have use normal laddle with holes. Here you go with the recipe
Ingredients:


Bengal gram dhal flour  – Besan Flour – Kadalai Maavu – 1 cup
Sugar – 1 cup to 1.5 cup ( I have used 1 cup only)
Yellow color – a pinch
Cardamom powder – 1/4 teaspoon
Cloves – 2 (Optional. I didn’t use)
Edible camphor – very small pinch (optional)
Cashews – 1 tablespoon broken
Sugar  – 2 tablespoon
Raisins – 1 teaspoon (optional. I didn’t use)
Edible camphor – a very tiny pinch (Optional. I didn’t use)
Oil – to deep fry

Oil/ghee – 1 tablespoon (for frying cashews)
Orange Food color – A pinch (optional)



Method


First let’s make sugar syrup. Take sugar and 3/4 cup of water in a pan. Heat it till you get 1 string consistency. Add the color if you are using. Switch it off. Keep it aside

Fry cashews till slight brown color in a tablespoon of Ghee/Oil add raisins and cloves if using fry for a min. Switch it off and keep it aside. Make boodhi dough by adding water (add water little by little) The batter should be in right consistency. Not so thin or so thick (when you pour it in the ladle it should fall smoothly)

Heat the oil and pour the ladle full of batter thro’ ladle with holes. Let it cook till bubbles subside (no need to be so crispy)

Drain the extra oil and add it to the sugar syrup. Clean up ladle before you pour the batter again thro’ ladle with hole. repeat the process for full batter.

Add Sugar, Fried Cashews, Raisins, Cloves, Edible Camphor mix well. Pulse it in a blender or mixer just for few mins. When it is warm enough to handle shape the boodhies into nice balls. I made smaller ones as everyone wanted small size ladoos.

Let it cool down completely and store it in air tight container
