Suji/Rava Appam – Desserts

During my growing up days, I was not a big fan of sweets/ Indian desserts. These days I am kind of drawn to jaggery based sweets. Sojji means Kesari / sooji ka halwa.  I tasted this at my friend’s place. When I tasted this I was sure my husband would love this as the stuffing is Kesari. He is a big fan of Kesari.  As guessed he loved it. I have made this with Jaggery but you can make this with sugar also.  

Ingredients

Maida / All purpose flour  – 1 cup
Rava / sooji / Semolina –   3/4 cup
Jaggery – 1/2 cup
Cardamom powder a pinch
Mixed nuts – 1 tablespoon (I have used cashews. fry it in ghee)
Ghee – 4 Teaspoon
Salt to taste
Oil to fry

 

Method:
Add a pinch of salt, 1 teaspoon of ghee to maida and prepare the soft pliable dough using the required water. Apply oil and cover it with a wet cloth for 30 mins

Fry rava till nice aroma release in 1 teaspoon of ghee. Keep it aside. 

Heat jaggery with 2 cups of water. Drain to remove the impurities. 

Bring it to boil again. Add Fried rava and stir without any lumps. Cook it with lid closed. 

Add rest of ghee, Fried Cashews when the mixture reaches halwa consistency

Add fried nuts and keep it aside. Let it cool down. Take Halwa and make an equal rava size balls.

Take Lemon size maida dough and spread it using your greased hands. Place the rava balls

Bring the all sides together using your fingers flatten it again. It will be thick like Poli. Repeat the process

Heat the oil in a deep pan. When the oil is hot deep fry each poli in medium flame till golden brown on both side

Drain the excess oil  by placing it over kitchen tissue paper
