Urad dhal is so rich in protein. some time I make simple salad / sundal with that. Last time when I soaked for vada I had more dhal than needed. So I have decided to try out savory version of kolukattai. I prefer this one over moong dhal. It is very flavorful and very healthy too. Left over stuffing can be served as sundal.
Ingredients
For outer layer
Rice Flour / Idiyappam flour – 1/2 cup
Salt per taste
Water as needed
Oil – 1.5 teaspoon
For Stuffing
Urad dhal – 3/4 cup ( I have used White one)
Coconut – 1/4 cup
Cumin seeds – 1/4 teaspoon
Asafoetida – A pinch
Method
For stuffing
Asafoetida , cumin seeds and salt. Steam cook it till not sticky (when you touch with your
hand it shouldn’t stick.
Let it cool down and run in food processor / mixie / blender to make a nice crumble.
Add urad dhal crumble and fry till mixture is dry. Switch it off and leave it aside.
For Outer layer
Combine the rice flour and salt in a wide bowl. Boil water.
Add boiling water little by little to the flour, mix very well with a spatula / spoon and make a soft dough. When it is cool down slightly and can handle knead it for few mins and make a smooth pliable dough. Apply oil and close it with wet cloth till you need it
Assembling Kozhukattai / Kolukattai
Grease your hand with oil and take small lemon size of rice flour dough and flatten it and keep the urad dhal stuffing and fold it and seal it as shown in the pics or your preferred shape .
Prepare the all the kolukattai. Arrange it in idli plate or steamer
Steam it for 10 – 12 mins. Once cooked the kozhukattai will be shinny and color will change too..
Now it is ready to be offered to god / or enjoy as snack
