I have been trying many millet recipes. So far my family are really loving millet recipes. I find that foxtail millet with jaggery tastes really great. This is perfect for evening snacks for kids. The other day I was talking to my MIL and she was talking about her growing up days. Those days they plant millets because crops take shorter time than rice or wheat. Her grand ma and mum will make lot of millet recipes and it has been a while since she cooked the millets again. She just started to make millet based recipe.. Anyway here you go with Foxtail millet sweet paniyaram
Ingredients
Thinai(Foxtail Millet) – 1/2 cup
Rice Flour – 3 tablespoons
Rice Flour – 3 tablespoons
Wheat Flour – 2 tablespoons
Coconut – 3 tablespoons
Jaggery – 1/4 cup
Cardamom powder – 1/4 teaspoon
Baking Soda – a pinch
Oil – as required to toast
Salt – a tiny pinch
Coconut – 3 tablespoons

Method
Add Rice flour, wheat flour, coconut, Jaggery, Salt, Cardamom and mix well. Keep it aside for 2 hours.
Add baking soda ad mix well. Heat paniyaram pan, grease the pan with oil. Pour laddle full of the batter in each hole.Cook covered for 2-3mins at medium flame.Turn it to other side and cook again till other side is completely cooked
