Cabbage and Chickpea Fried Rice – One Pot Meal

Fried rice is very easy to make. Esp for lunch box on weekdays. It is also a very quick and healthy recipe. I have posted Chinese Fried rice / Vegetable fried rice before. Cabbage and Garlic really gives a wonderful flavor. Adding chickpeas makes it a perfectly balanced one pot meal. All you need is about 30 mins to make this a tasty  healthy meal. So this can be perfect for your kids lunch box as it is healthy and with less masala. So simple that even a bachelor can try…

Ingredients


Cabbage – 1.5 cup 

Cooked chana / Chickpeas – 1 cupCooked basmati rice (you can use any long grain rice) – 3 cups

Pepper powder – 1 teaspoon (Adjust to your spice level)

Green chillies – 3 (slit into 2)salt to taste
Spring onion – 1 bunch (separate the white portion and chop it)
Soya sauce – 2 teaspoon
Sesame oil – 1 tablespoon
Coriander leaves – 1 tablespoon ( chopped finely)
Curry leaves – 10 (optional)


Method:

Heat oil in a pan and add white portion of spring onion and garlic. Fry till garlic is brown in color. Add green chillies and curry leaves. Fry for 20 Sec. Add cabbage and fry it in high flame for about 3-4 mins. 

 

Add cooked Chickpeas. Fry for 30 sec. Add pepper, salt, soya sauce. And mix well. Add cooked rice mix well. Fry it in high flame for 3-4 mins. Add spring onions, coriander leaves and mix well. 


Serve hot.
