Eggless Chocolate Peanut Butter Oats Cookies Recipe by Veena Theagarajan

My kids wanted some cookies. I wanted to do something with Chocolate. Most kids love chocolate, peanut butter why not combine both? At the same time add some oats to make it little healthier? It is perfect killer combo. It came out extremely good. I made it bite size as my son was saying it is so addictive and difficult to stop
Ingredients:


All purpose flour – 1.5 cups
Un sweetened Cocoa powder – 1/2  cup
Coconut sugar – 3/4 cup to 1 cup
Apple sauce – 1/4 cup
Salt pinch
Unsalted butter – 115 g (at room temperature)
Peanut butter – 1/4 cup
Baking Soda – 1/2 teaspoon
Oats – 1 and 1/4 cup (I have used quick cooking oats)
Vanilla extract – 1 teaspoon


Method:

Line baking tray with baking sheet. Pre heat the oven at 180 degree C. Sift together flour, coco powder, salt and baking soda. keep it aside. Cream peanut butter and butter together (I have used hand held electric mixer). Add Apple sauce, coconut sugar, vanilla extract mix well. Till sugar is melted completely. Add sifted flour. Mix well. 

Add oats and mix well. The dough would be bit sticky it’s ok. If you prefer to keep it in the fridge for 30 mins go ahead. I didn’t. Make marble size balls and flatten it using your palm. Arrange the flatten cookies dough in the baking tray bake it for 18 mins. Let it cool completely.

Store it in Air tight container and enjoy the cookies

    Absolute killer recipe. Chocolate, peanut butter and oats – all our favorites. This is in my sure-try list.

    There's such an ingredient called "coconut sugar"? I'm sure behind time. Yet that ingredient with the rest created the trill and excitement in the cookies.
