I love north Indian snacks / chats.. Esp this flaky kachori made with moong dal mixture. During my childhood my mum makes most of the south Indian snacks esp for after school snacks. However for north Indian Variety we used to buy from outside. My kids are big fan of Indian snack items. This one is nice, quick snack and perfect for after school snacks
Ingredients
For Dough (Crust)
Maida / plain flour – 1.5 cups
Ghee – 3 tablespoon
Salt to taste
Cron Flour – 2 tablespoon
For Filling
split Moong dal – 1/2 cup
Green chillies – 2
Dried Mango powder – 1/2 teaspoon
Cumin powder – 1 teaspoon
Asafoetida – a pinch
Garam masala powder – 1 teaspoon
Salt to taste
Oil – 2 tablespoon
Oil for deep frying
Method
Mix in all the ingredients under dough in broader vessels. Mix well. Make a soft dough by adding cold water. Keep it under damp cloth for 30 mins.
Wash and soak the Moong dal for 4 hours. Drain it and grind to coarse paste together with chillies. Heat the kada and add oil add Asafoetida fry for 20 sec. Add grinded paste. Mix well. Add Cumin powder, salt, Dried mango powder. Mix well. Cook the dhal paste for 5-7 mins. If you need to sprinkle water go ahead to do it. cool it and divide it into 10 equal portions
Divide the dough into 10 equal balls. Roll them into small circle. Put one portion of filling and roll them together to seal. Remove the excess dough. Roll it into 2 inch round disk. Make sure the filling doesn’t come out or no tearing. Repeat the process for all the 10 kachori. Heat the deep curved pan and add oil for deep fry.
Heat the deep curved pan and add oil for deep fry. When it is in correct temp put the kachories. (When you put the plain dough it should raise immediately. then oil is in right temp). Fry till all side is brown in color in medium flame. Drain it and leave it on kitchen tissue to drain the extra oil. Repeat the process till all kachories are done
Serve hot
