Arhar Dal Fry – punjabi arhar dal fry recipe – Simple dhal fry recipe

When I saw this at vegrecipesofindia I was attracted to the recipe by name. After checking the post I loved the spices used in it. I immediately bookmarked. It is a good alternative to the normal sambar. This is very simple and can go well with rice, roti, dosa or iddiyappam. 
Ingredients


For cooking Dal


Thoor dhal / tuvar dal / pigeon pea lentils – 1 cup
Ginger – 1/2 inch (finely grated)
Turmeric powder – 1/4 teaspoon
Onion – 1/2 (finely chopped)
Water as required to cook the dal


Other Ingredients:


Butter / Ghee – 2 tablespoon
Cloves  – 1 to 2
Bay leaves – 1
Cumin seeds – 1 teaspoon
asafoetida / Hing – a pinch
Green chilles – 1 to 2 (adjust to your spice level. Slit into 2)
Red chilli powder – 1/4 teaspoon
Garam masala powder – 1/4 teaspoon
Garlic – 4 (chopped finely)
Onion  – 1/2 (finely chopped)
Tomatoes – 1 (finely chopped)
Dry fenugreek leaves – 1 teaspoon (crushed)
Dry mango powder – 1/2 teaspoon
Salt to taste
Coriander leaves – 1 tablespoon (finely chopped)

Method:
Wash and cook the lentils with ingredients under for cooking dal. Cook till 5-7 whistles (dal should be completely cooked so that you can mash well). when it is done switch it off and let it cool down. When it is ready to open the lid, mash the dhal well. Keep it aside

Heat the pan and add butter. When it is hot add cumin seeds, asafoetida. Let it crackle. Add garlic and fry till slight brown. Add onion and fry till they are transparent. Add tomatoes and fry till it is mushy. Add green chillies, red chilli powder, gram masala and mix well. Fry till masala is cooked and oil start to separate. Now add crushed methi leaves and dry mango powder. Mix well. Let it cook for 30 sec. Add cooked dhal and mix well. Cook it for another 5 mins in low flame. Switch it off

Serve hot
