Ash Gourd / Kasi / Poosanikai Halwa

I wanted to try this halwa for quite some time. I have tasted this at my relative place few times but never tried making it. Today I had craving for quick sweet. I had Ash gourd at home so decided to give it a try. After Beetroot Halwa, Pumpkin Halwa our family warming up to vegetable based sweets. This one no exception came out pretty well too
Ingredients


Ash gourd / white pumpkin / Poosanikai Halwa – 1 cup (grated)
Sugar – 1/4 + 2 tablespoon to 1/2 cup
Milk – 1/2 cup
Cashew nuts – 1 tablespoon ( I have sued baked so didn’t fry in ghee. If you prefer frying fry it in 1/2 teaspoon of ghee)
Ghee – 2 teaspoons



Method:


Remove the skin and grate the ash gourd. Cook it in medium flame. Water from ash gourd is good enough. I just cooked in the pan with lid closed. You can pressure cook it till one whistle too. 

In a pan add sugar and squeezed cooked and cool down Ash gourd juice and stir till sugar is melted. 

Add milk and let it boil. Add cooked Ash gourd and stir till the milk/water is fully absorbed. 

Add Ghee and stir for another 3 mins. Add broken cashews mix together.
