bitter gourd roast

This roast is one of our family’s favorite except for my husband. However I am not sure about the nutritional value of this as the process of cooking is something that I am convinced takes out all the benefits. So we have 2 ways of making bitter gourd roast. Today I will give you method one.. This method reduces bitterness significantly.



Ingredients:


  • Bitter gourd – 7
  • Chilli Powder – 1.5 Tea spoon
  • Turmeric Powder -1/4 Tsp
  • Sambar Powder – 1 Tea Spoon
  • Cron flour – 2 Table Spoon
  • asafoetida – a Pinch
  • bengal gram dhal flour – 1/2 cup
  • Curry Leaves – 2 String
  • Mustard Seeds – 1 Tsp
  • Urad Dhal – 2 Tsp
  • Salt as reqired



Method:

  • Cut bitter gourd into 2 and remove the seeds
  • Slice it in thin Piece
  • put it hot water for 30-40 mins
  • squeeze out water from bitter gourd
  • put it in broader vessel
  • mix Chilli powder, Turmeric Powder, Sambar Powder, Asafoetida, Salt, Cron Flour and bengal gram dhal flour
  • mix it well (water in bitter gourd should be good enough to hold the masala if not sprinkle water)
  • Leave it for 45 mins
  • Heat the oil in a kada
  • When the oil is hot add mustard seeds. When it start splutter
  • add Urad Dhal and stir till it is brown
  • add Curry Leaves and fry for 10 sec
  • add the marinated Bitter Gourd
  • mix it at regular intervals till it become crispy
  • when it turn crispy switch off and transfer to serving dish
