Bitter gourd thokku – Bitter gourd Pickle – Pavakkai Thokku – Pavakkai pickle

My kids love bitter gourd. My sis doesn’t make bitter gourd recipes as her kids and hubby don’t eat bitter gourd. When I visited her last time she was mentioning about this recipe which every one in her family likes. She told me she servse it as side dish for idli / Dosa / Rice. I haven’t tried this version before.. This is a definite keep recipe. I have boiled the bitter gourd with little salt and drained the water. You skip the process and add fresh bitter gourd
Ingredients


Bitter gourd – 2 cups (Chopped finely)
Small onion / Shallots – 2 cups (chopped finely)
Sambar powder – 2 tablespoon
Jaggery – 3 teaspoon
Mustard seeds – 1/2 teaspoon
Urad dhal – 1 teaspoon
Coriander leaves – 1/2 cup
Fenugreek seeds – 1/8 teaspoon
Oil – 1/4 cup
Salt to taste
Asafoetida – 2 pinch
Curry leaves – 10
Tamarind – marble size



Method:


Heat the oil and add mustard seeds, urad dhal, fenugreek seeds. Let it pop. Add small onion and fry till it is slightly brown. Remove it and keep it aside. Add bitter gourd and fry till it is fully cooked.

 Add tamarind paste, Sambar powder

Add Jaggery mix well. Cook till 3/4th done. Mix in Fried onion.

Add coriander leaves and curry leaves. Mix well. Continue to cook till oil separate out

Switch it off and Let it cool down. Store it in air tight container and enjoy it

    Not a fan of bittergourd much but I still make my family eat it (and myself :-P) coz its good gfor our health 🙂 Love the idea of a pickle made with bittergourd!

    I love bitter gourd and same pinch,I made pickle few days back..getting ready in my draft too..the recipes are different though,this one looks interesting and tempting 🙂

    We love this dish at home too. It never lasts for more than a day. Since you have named it thokku, does it have along shelf life?
