Having tried various kormas made with mixed vegetables or potatoes, I couldn’t envision how the high water content of bottle gourd would work in a korma. One evening, my cousin invited me over for dinner, and to my delight, she served the bottle gourd korma with freshly made chapatis and pulkas. Ginger paste – 1/2 teaspoon
Garlic paste – 1 teaspoon
Bottle gourd – 1/2 cup (cubed)

Step-by-step instructions to make bottle gourd korma
Heat oil in pressure pan/ cooker. Add all the ingredients under to Temper section. Fry till nice aroma released. Add Onion, curry leaves. fry for a min
Add tomatoes, ginger garlic paste, green chili fry for another min. Add tomatoes fry for a min. Add Mint leaves
Add diced bottle gourd, salt and required water. Pressure cook for a 1-2 whistles
Let it cool down. Grind all the ingredients under to grind section
Once it is ready open the pressure cooker lid and add grinded paste and required salt. Adjust consistency with more water as needed
