Nuts and Cumin seeds really goes well. Normally If I do for my family I will do it plain Jeera rice however If I cook for guests I will add nuts to it. Love the crunchiness and richness that gives to the rice. I have posted Almond Jeera rice in my space. I had some Cashew left in my fridge which I wanted to use it. So I ended up using it. The rice had different flavour. I always think Cashew and pepper goes well. This one no exception.
Ingredients
Bastmati rice – long grain rice – 1 cup
Cashew – 20 (split into 2)
Ghee – 1 tablespoon
Oil – 2 teaspoon
Shahi Jeera – 2 teaspoon
Pepper powder – 1/2 teaspoon
Onion – 1 (medium sliced thinly)
Bay leaves – 1
Cinnamon – 1 inch
Clove – 2
Cardamom – 1
Salt to taste
Mint leaves – few
Coriander leaves – 1 tablespoon (finely chopped)
Method:
Wash and soak rice for 30 mins. Drain it. Keep it aside.
Heat the pan with 3 teaspoon of ghee / oil. Add Onion and fry till crisp. Keep it aside.
Add cashew and fry till brown in color. Keep it aside.
uthe drained rice till moisture is absorbed. Remove it from the pan. Add Remaining ghee/ oil. Add bay leaves, cinnamon, clove and cardamom. Fry for 2 sec. Add Shahi jeera and fry till it crackle.
Add 1.5 cup of water, Mint leaves, salt and pepper let it boil. Add rice and cook till is done.
Rice should be separate. Add fried cashews, onion and coriander leaves. Mix gently
Serve hot.
