Cheese Cup Cake – Eggless Recipe

One of my Colleagues baked cup cake with cheese piece in the middle. I liked the taste of cheese with the sweetness of cupcake. Hers was with egg. I wanted to try eggless. I have modified my basic pound cake / sponge cake recipe with condense milk. I had it in the to do list for a while. And last week I finally tried it. It came out nice and kids really enjoyed it. 
Ingredients


All purpose flour -120g
Butter -60 grams
Condense Milk – 1/2 tin (I have used low fat)
Luke warm water – 150 ml
Baking powder – 1 teaspoon
Baking Soda-1/2 teaspoon
Cheese cubes – 5
Oats – 2 tablespoon
Vanilla essence – 1 teaspoon

Method:
Sieve together flour, baking powder and baking soda. Mix in oats and mix well

Cream together condensed milk and butter. Add Vanilla essence, water and mix well. Add the dry ingredients in batches. Mix well

Grease the muffin cup with butter  or oil. Fill in half and cut the half of cheese and place it in middle and fill in the dough again till 3/4th of the cup

Bake it for 25-28 mins or till when you insert a toothpick comes out clean. Cool the muffins completely. Enjoy it

    Beautifully made Veena. I have failed a few times in trying to make eggless cakes. Although I followed the recipes closely, not sure what happened. I am wondering if I can try just cake without the cheese?
