Gingered Beet and Quinoa soup

I love ginger. I can even have old ginger root candy and finish the whole thing in no time. My kids love beet. One of weekend while I was breaking head for lunch idea I wanted to do something other than rice. Also wanted some soupy stuff as my 2nd son seems to have bit of cold.I heard lot about ginger in fighting cold. So decided to do Beet ginger quinoa soup. They loved it
Ingredients:


Cooked Quinoa – 1 cup

Beetroot – 1 (chopped finely)
Onion – 1 Finely chopped
Ginger – 2 tablespoon (finely chopped)
Garlic – 2 (chopped finely)
Oil – 2 teaspoon
Salt to taste
Finely grounded pepper powder – 1 teaspoon (adjust to your spice level)
coriander / cilantro – 2 tablespoon
Mint leaves – 1 tablespoon
Vegetable broth / water – 6 cups



Method:


Heat kada and add oil. When it is hot add garlic and ginger and fry till garlic is brown in color. Add onion and fry till it is cooked. Add beet and 6 cups of water or vegetable broth. Cook till beet it cooked with lid closed. Add pepper and let it boil for a min.  Add cooked Quinoa and mix well. Cook for another 3 mins (add more water if required). Switch it off. Add cilantro, Mint leaves. Mix well



Serve hot
