I wanted to try this for quite some time. However my 2nd son is not fond of Corn so I was waiting for a good opportunities to do this. Last year during our vacation in India we had ordered this starter in one restaurant. Knowing his taste we ordered something else for 2nd one. But it took sometime to arrive. By looking at the smooth round ball he just tried without knowing it. He kind of liked it as corn was all mashed up. So I decided to try it out at home. He liked it too So I have found a way to include Corn as part of his diet not a healthy way though
Ingredients
Potato – 2 medium size
Corn Kernels – 1,25 cup
Cheese – 1/2 cup (I have used grated Mozzarella)
Salt to taste
Pepper powder – 1/2 teaspoon + 1/4 teaspoon
Dried Oregano – 1/2 teaspoon
Bread Crumbs – 1.5 cups (or More)
Corn Flour – 2 tablespoon
All purpose flour – 2 tablespoon
Oil for deep fry
Method:
Cook Corn & potato with salt. Remove the Corn Kernels and remove skin of potato.
Grind corn with 1/2 teaspoon pepper, dried Oregano and salt.
Mash potato. Add grinded corn, Grated cheese. Make a smooth paste.
Make a medium size ball. Roll that in bread curmbs and keep it aside
Mix Corn flour, All purpose flour, salt and 1/4 teaspoon of pepper. Mix with water to make thick paste.
Dip the corn potato ball into the paste. Roll it again in bread crumbs. Keep it aside
Heat oil in a deep pan for deep frying. Place few balls at a time. Some time the cheese might ooze out. Perfectly fine just make sure u stay far way from oil otherwise it might splash on you
Once all sides are cooked drain the oil and take it out leave it on kitchen tissue to let the oil drain
Serve hot!
