Last time when I had my Niece she was mentioning about pasta made by mum which was very famous. Which is news to me. After that my sis told that me too, I asked my mum for the recipe She gave me the recipe ovew phone, my kids said this is not that great.. Last month I visited her with my 2nd son. I have asked her to do it and I recorded the recipe. Everyone loved it. When I come back I want to try it before I forget. My 1st son complemented as this is the best pasta so far. do try it out
Ingredients:
For Tomato sauce
Onion – 1 (big)
Tomatoes – 2 (I have used Roma or bangalore tomatoes)
Garlic – 6 pods
Olive oil – 2 tablespoon
Salt to taste
Coriander powder – 1 teaspoon
Sambar powder – 1 teaspoon
Cashew nuts – 3 tablespoon
For white sauce
Butter – 2 tablespoon
Flour – 1 tablespoon
Milk – 1.5 cups
For Pasta:
Pasta of your choice – 250g
Salt to taste
Oil – 2 teaspoon
Mixed vegetables – 2.5 cup (I have used capsicum, Beans, carrot and broccoli)
Coriander leaves – 1 tablespoon
Method:
Soak cashew for 1 hr. Drain the water and keep it aside. Heat olive oil in a pan add garlic and fry till brown in color. Add onion,salt and fry till brown in color. Add tomatoes. Fry till mushy
Add Sambar powder, coriander powder and fry till nice aroma released. Switch it off. Let it cool down
Grind it to smooth paste with soaked cashew. Keep it aside
Heat water. Add teaspoon of oil and salt. Let it boil. Add pasta and cook as per instruction. Strain and keep it aside. Heat butter in a pan. Add flour and fry in low flame till slight brown color.
Add milk and let it boil till the sauce become thick
Heat pan and add all the mixed vegetables and salt. Cook till 1/2 cooked. Add grinded tomato sauce, water, Adjust Red chillies and adjust salt. Continue to boil
Add white sauce and mix well. By now vegetable would be fully cooked
Now add Cooked pasta mix well. Cook for another 2 mins in low flame. Add chopped coriander. Switch it off
Serve hot
