Eggless Ragi Chocolate Cake with Jaggery

I have posted a couple of Ragi base cake – Ragi Chocolate cake & Ragi breakfast cake (which is with banana). Loved the texture of the cake and the flavor ragi bring in. This is one of my go-to recipes when I feel like eating cake (of course other than cheesecake). I wanted to try the cake with Jaggery. I have posted whole wheat with jaggery. This is a simple yet foolproof recipe. This is quite healthy & you can serve this for breakfast. My sons who are not a big fan of Ragi loves this…I have used Ghee in this if you prefer to use oil use coconut oil. If you are a big fan of jaggery you can use coconut sugar too.

Ingredients:
Ragi Flour – 3/4 cup (100 g)
Coco powder – 2 tablespoons
Whole Wheat Flour – 3/4 cup (100g)
Baking powder – 1 teaspoon
Baking soda – 1/2 teaspoon
Vanilla essence – 1 teaspoon
Melted Ghee – 1/2 cup
Salt – 1/8 teaspoon
Jaggery Powder – 1/2 cup (200g)
Curd – 1/2 cup

Milk – 1/2 cup



Method:


Dry roast Ragi flour till nice aroma released. Let it cool down

Shift Rag, wheat flour, baking powder, baking soda, salt, and cocoa powder. melted ghee, Vanilla essence, milk, curd mix well.

Add jaggery powder mix well. Grease baking pan with butter. pour batter. Tap to level it.

Preheat oven at 180 degrees C Bake the cake at 180 degrees C or till an inserted toothpick comes out clean. Let it cool down.
