Eggless Ricotta Cheese Carrot Cake

I initially ordered ricotta cheese to make a pound cake. But when we ordered food we tried this carrot cake so decided to try carrot cake with ricotta cheese. This is a simple recipe. I have used all-purpose flour I think all wheat flour will make this cake denser. The outcome of this recipe really great. super soft, moist cake. For this cake, I have used cold butter. The result was a super soft cake. This can be served for breakfast.

Ingredients

All-purpose flour – 2 cups
baking soda – 1 teaspoon
baking powder – 1 teaspoon
ginger powder – 1/4 teaspoon
Cinnamon powder – 1 teaspoon
Salt to taste
Cold butter – 5 tablespoon
Milk – 1/2 cup (whole milk)
Brown sugar – 1/2 cup

white sugar – 1/2 cup
carrot – 3/4 cup (grated)
ricotta cheese – 3/4 cup


Method

In a bowl take all the dry ingredients (flour, sugar, cinnamon powder, salt, ginger powder) Mix well

Add Carrot and butter. Mix well. Add milk, cheese. 

Mix well. Grease baking tray. pour the batter and tap few times

Preheat oven at 180 degrees C. Bake the cake at 180 degrees C for 20-22 mins or till inserted toothpick comes out clean

Let it cool down and slice!
