Eggless, Vegan avocado chocolate cupcake

My kids love cupcakes. After 2 weeks of India trip they were dying for non Indian food. They were still on school holidays so for breakfast they wanted something different from bread and Indian. So I have decided to do the cup cake. They wanted something with chocolate. So I have decided to make avocado chocolate cup cakes. I have followed the recipe from Joy the baker
Ingredients:

All purpose flour – 1 cup
Whole wheat flour – 1/2 cup
Cocoa Powder – 3 tablespoon (unsweetened)
Baking soda – 1 teaspoon
Baking powder – 1 teaspoon
Oil – 2 tablespoon
Vanilla extract – 1 teaspoon
Warm water – 1 cup
White Vinegar – 1 teaspoon

Avocado – 1/2 cup from 1 medium ripe avocado (mash well)

Pinch of salt
Brown sugar – 3/4 to 1 cup ( I have used 3/4 cup)

Method:

Preheat oven to 350 degrees F or 180 degrees C.  Grease cup cake cup and set aside.
Sift together all purpose flour, whole wheat flour, baking powder, baking soda, salt and coco powder.

Mix together all the wet ingredients, Avocado paste and sugar. Stir till sugar is melted
Add dry ingredients and mix till smooth

Fill the  greased cupcake mold till 3/4th  Bake for 30 to 40 minutes, until a toothpick inserted comes out clean. Let it cool down completely

Enjoy it

    Hi Veena,

I am a first time visitor to your blog and I really love it. Let me congratulate you in designing such a beautiful blog and helping all the first time bakers with your easy recipes.

I would like to try the avacado chocolate cupcake but need a clarification, the recipe mentions 3tbsps of cocoa powder in the beginning and 6 tbsps of unsweetened cocoa powder at the end..does it mean 9 tbsps altogether? Kindly clarify. appreciate an early response.

    Best wishes,
    Ranjitha
