Foxtail millet idli – Thinai Idli – Healthy breakfast recipe – Healthy dinner recipe – Healthy breakfast recipe

I love to try traditional South Indian dishes with millet. I have posted those in my space before. This is yet another version of millet idli. This time it is with Foxtail millet. I have posted foxtail millet dosa before. However that recipe uses portion of normal rice. I wanted to try idli by replacing rice completely with Millet. It came out wonderfully. You can give it a try
Ingredients


Fox-tail millet/thinai arisi – 3 cups
Urad dhal – 1 cup
Methi/fenugreek seeds – 1tsp
Salt to taste(rock salt)



Method

Wash and soak Foxtail millet separately for 6-8 hours or overnight. Wash and soak Urad dhal and methi seeds together for 6-8 hours or overnight. 
Grind the urad dhal into nice foaming batter (I have used grinder but you can use mixie or blender, food processor).  by adding water at regular interval ( this is very important to get fluffy batter and soft idli)

Grind foxtail millet with water 

Add grinded urad dhal batter and salt. Grind it together for 2- 3 mins. Take out the batter and Let it ferment overnight or 6-7 hours

Grease the idli cooker or traditional idli maker. Pour the batter and let it cook for 10 mins or till wet tooth pick comes out clean

Remove it from the plate and serve hot with your favourite chutney
