Stuffed Cauliflower Paratha – A Healthy Stuffed Indian Bread

I love Stuffed paratha / chapati for my lazy or busy weekday / weekend dinner. It is so easy and it can be quite filling as well as balanced. Last week when we visited Delhi for a holiday we stayed in a service apartment. And for breakfast they served gobi paratha with yogurt it was so tasty and keeps us full till lunch. This can be a good lunch box item for kids. It can also be used to sneak some vegetables into kids meal. After my return I tried few times but didn’t manage to click the final product. So this time I purposely made it little early so that I can click. Here you go with one of my favourite stuffed paratha
Ingredients:


For Paratha / Chapati


Wheat flour – 3 cups + whatever required for dusting
Salt to taste
Water


For stuffing


Cauliflower / Gobi – 2 cup grated finely
Chilli powder – 1/2 teaspoon
Ginger paste – 1/2 teaspoon
Garlic paste – 1 teaspoon
Turmeric powder 2 pinch
Salt to taste
Coriander powder – 1/2 teaspoon
Cumin powder – 1/2 teaspoon
Oil – 1 teaspoon
Coriander leaves – 1 tablespoon (finely chopped)
Oil for making paratha



Method:


Prepare dough first. Add wheat flour and add salt. Using water make into smooth soft piable dough. Dough shouldn’t be too tight or too loose

Next prepare stuffing, heat oil in a pan add grated cauliflower. Cook for 2 mins with lid closed. Add ginger and garlic pastes. Mix well. cook for another min.

Add salt, turmeric powder, coriander powder, chilli powder and cumin powder. Mix well. Continue to cook. Add coriander leaves and mix well

To make paratha, Take a lemon size ball and roll it into small disc and add 1 teaspoon of stuffing inside and bring together the edges from all side. 

And cover it so that it is well sealed. And roll it back into paratha

Heat the flat pan and add the rolled paratha and drizzle oil around it cook and let it cook. Once cooked turn it over on the other side. And cook it in medium flame.

Serve with pickle and yogurt
