Gond ke laddu is a popular northern Indian winter sweet. Gond, or edible gum, is also known as Badam pisin. I used wheat flour for this ladoo, but you could use millet flour or roasted gramme flour instead. Gond laddu are both tasty and nutritious.
Badam Pisin or Acacia Gum, also known as Dink in Marathi, is the Gond used in this recipe. I first learned Badam Pisin while researching Jigarthanda. Every summer, I’ve been making Jigarthanda. I wanted to do something different with Gond. I’ve narrowed it down to a few. One such recipe is Gond Ke Ladoo.
These ladoos are packed with nuts, wheat flour, and Gond and are a filling yet healthy recipe. It is suitable for nursing or lactating mothers.
Step 1: Heat 1/4 cup ghee. Add Gond and fry till all the Gond puffed up. Continue to stir till it is done. Remove it and let it cool down
Step 2: Add Cashew & Almonds till nice slight brown color. Remove it. Let it cool down
Step 3: In the same pan add another 2 tablespoon of ghee, Add atta and fry till nice aroma released
Step 4: Grind roasted nuts, roasted Gond into Coarse powder. Add this & Cardamom powder to roasted atta. Add Jaggery powder and mix well. Add rest of the Ghee. Mix well.
Step 5: When the laddu mixture is still hot and the heat is tolerable to you, 1.5 tablespoon of mixture. Shape in a round ladoo. If you the shape is not holding more Ghee mix well and try again
Notes
You can replace jaggery with raw sugar or coconut sugar
Instead of using mixed nuts you can go with one nut either cashew or almond
Make sure you fry Gond well
