Eggless Honey Cake Baking Indian Homemade recipe by Veena Theagarajan.

I have bookmarked this recipe for years! yes for years! however my sons are not big fans of

Jam. I do eat jam but not crazy about it also was scared of eating the whole cake by myself I kept postponing baking this. During Christmas in my school days we used to buy plum cake. After blogging I saw this in few blogs and stories around it esp since it is famous during Christmas season. Last year I went to India for holiday during Dec (X Mas) and found this cake in every bakery I stepped in!. Last week I wanted to bake some cake for my friend. I was browsing thro’ my list and saw this one. So I finally made it. I have followed my basic sponge cake recipe with condensed milk with slight modification. Happy Christmas to everyone! 

Ingredients:

 

All Purpose flour / Maida – 1.25 cup
Condensed Milk – 1 cup
Milk – 1/2 cup (Room temperature)
Baking Powder – 1 teaspoon
Baking Soda 1/2 teaspoon
Oil – 1/2 cup
Vanilla essence – 1 teaspoon
 
For Honey Syrup
 
Honey – 1/4 cup
Water – 1/4 cup
Sugar – 2 tablespoon
 
For Jam Layer
 
Jam (Strawberry / Mixed) – 1/4 cup
Sugar – 1 teaspoon
Desiccated coconut – As needed

 
Method:
 
Sift Flour, baking powder, baking soda together. In another bowl take Milk, Condensed milk, Oil, Vanilla essence, Lemon juice. Whip well. Add dry ingredients

Mix well. Pour it to greased baking tray. Preheat oven at 160 degree. Bake it for 40 mins or till inserted toothpick comes out clean
While cake is getting baked let’s make Honey syrup. Heat water and sugar together. heat till sugar dissolves. Switch it off

When the sugar water is lukewarm add honey mix well. Keep it aside

Heat Jam, Sugar together till Jam melts. Don’t over heat it 

Once cake is done let it cool down. Once cool down make small holes. Pour honey syrup so that honey syrup can be absorbed. 

Spread Jam on top and sprinkle desiccated coconut.

Slice and serve!

    It's been a year since we met! 🙂 I can understand your plight… when nobody would eat, you would think of yourself and not want to bake it… That cake looks so moist and delicious…
