iyer sambar, Chutney recipe – Salem Iyer sambar and chutney recipes – Side dish recipes

I saw this from here from the time I saw it I am so tempted to try. I have tried a few side dishes with boiled onion or tomatoes. I kind of like the taste. Since my husband is a very big fan of sambar so if I find any sambar recipe or taste anything different will definitely try out. So I am not sure whether this is authentic but I loved this variation. Do try out this and let me know. This is perfect for idli/ dosa. This sambar and chutney need to be done together as you need water which used to cook onion tomatoes for chutney needed for sambar.
Ingredients



For Sambar


Toor Dal – 3/4 cup
Onion – 1 (chopped)
Turmeric powder – 1/2 teaspoon
Tomatoes – 1 (cut tomatoes)
Bengal gram dal – 1 tablespoon
Red chilies – 3-5
Fenugreek seeds – 1/2 teaspoon
Coriander seeds – 2 teaspoon
oil – 1 teaspoon
For chutney


Onion – 2 big (Chopped finely)
Tomatoes – 3 (a big one)
Red chilies – 3-5 (Adjust to your spice level)
Bengal gram dal – 1 tablespoon
garlic – 2
Salt to taste
oil – 1/2 teaspoon





Method: 
Chutney:
Cook onion, tomatoes and red chilies with required water. I have cooked in the pressure cooker for 2 whistles

roast Bengal gram dal in 1/2 teaspoon of oil

once the cooker cool down open the cooker and strain it (reserve the water for sambar) 
Once cool down grind it with garlic, salt coarse chutney with fried Bengal gram dal



Sambar

Add salt to tomatoes and keep it aside for 30 mins. Drain water from tomatoes

Wash and soak toor dal for 1 hr. 
Heat oil in a pan. Add Fenugreek fry till brown color. Add Channa dal and fry till golden brown. Add coriander seeds and fry till nice aroma released. Add red chilies and fry for a min. 

Once cool down grind to smooth paste with water.

Cook Toor dal with onion, turmeric powder for 3-4 whistles. Once cool down open it and mash it

with drained water from chutney onion/ tomatoes add tomato water, ground paste mix well. adjust salt

Add this to cooked dal and allow it to boil. Once boiled switch it off.

Serve hot
