Pumpkin Chutney

Our family loves pumpkin. At least once a week I make some vegetable base chutney. Every time when I wanted to try out pumpkin chutney I was wondering whether it will become sweet.. Today I wanted to try out. I have added more chillies. It tasted so good. Even kids were surprised by the taste. I had it with idli. It can go well with dosa even as Thogayal for white rice
Ingredients


Pumpkin – 1.5 cup (grated)
Urad dhal – 2 teaspoon
Bengal gram dhal / chana dal – 2 teaspoon
Dry Red chillies – 6
Oil – 2 teaspoon
tamarind Juice – 1 teaspoon thick paste
Coconut – 1 teaspoon



Method


Heat the oil and fry chillies, urad dhal, Chana dal till Dals are brown in color. Keep it aside. Fry the pumpkin till it is soft. Add salt and tamarind paste. fry for another 1 min. Switch off the flame, Add grated coconut to it and let it cool down. Grind it with little water. You can grind to little coarse paste. I prefer it that way

Serve it with idli / dosa or rice

    wow..this sounds new and interesting…i usually make a similar chutney with chayote, yours with pumpkin sounds too good, can't wait to try it..like those polka dot bowl n plates, cute 🙂
