For Ganesh Chaturthi / Vinayagar Chaturthi, Kozhukattai / Kolukattai is a must. I make it for evening snacks / tea time snacks because I enjoy trying new stuffings. This time, I wanted to try making Modagam / Modhagam with an outer layer. Ragi’s nutty flavour appeals to me. I’ve posted numerous Ragi recipes.
Few combinations are guaranteed to please, such as ragi and chocolate, ragi and banana, and ragi and coconut. This was my evening snack. This can also be served for breakfast. Ragi is well-known for its medicinal properties. Because it is high in iron and the colour is appealing to children, you can use it to make a cake, Murukku, poori, and so on. (ragi chocolate cake, Ragi breakfast cake, Murukku, ribbon pakkoda, Ragi poori) I really liked the combination. It is not difficult to get your entire family to eat millet!
For Stuffing Coconut -1 cup Jaggery -3/4 cup Cardamom -1/4 teaspoon Salt a pinch Ghee – 1 teaspoon
For Modak Ragi flour – 1 cup Idiyappam flour – 3 tablespoons Salt to taste Boiling water to make the dough
Step by step instruction to make Ragi Kozhukattai
Step 1: Heat Ghee in a pan. Add coconut, jaggery, cardamom powder pinch of salt, and mix well. Continue to cook till Jaggery melted and it forms a nice mass. Switch it off.
Step 2: Take Ragi, rice flour, and salt. Add boil water bit by bit to make smooth dough
Step 3: Take Lemon size Ragi dough & Coconut stuffing and make a cup. Place small coconut ball
Step 4: Make a cup with ragi dough. Place coconut ball Bring all the sides together and make modak.
Step 5: Arrange it in the greased plate. Steam it in idli pan for 13-15 mins in a medium flame or till it is shinny & not sticky
Step 6: Once done switch it off. And remove it. Serve it!
Notes
My Ragi flour is homemade and roasted. If you use store brought you can roast till nice aroma released
You can Replace coconut stuffing with regular Pornam with Bengal gram., For recipe Pls. refer here
If you store it in fridge while reheat it sprinkle water otherwise outer skin might turn hard
For making outer skin dough water should be hot
If you prefer you can add boiling milk to make outer skin
