Rajma Chawal (Rajma Curry Rice)

I wanted something quick for the kids lunch also something that will give them energy to last longer in the school. They prefer to pack only one dish (if they are packing for lunch) so need to make sure I pack something which provides most of their protein and vitamin needs. Chawals are good option for that

Ingredients :

Rajma – 1/3 cup
Onion – 1 Sliced thinly
Tomato  –  3 Sliced thinly

Spinach – 1/2 Cup
Garlic – 2 Pods

Ginger – 1 Inch
Salt as required
Coriander Powder – 1 teaspoon
Chilli Powder – 1 teaspoon
Turmeric Powder – 1/4 teaspoon
Garam Masala Powder – 1 teaspoon
Oil -1 tablespoon
Cumin/Jeera seeds -1 tsp

Curry Leaves – 10
Coriander Leaves – 2 tablespoon finely chopped

Method:

Soak rajma (kidney beans) overnight.
Pressure cook rajma with a little salt till soft. (5-6 whistles)
Heat 2 teaspoon of oil and add garlic, ginger fry for 2 mins. Add chopped onion and fry till it is translucent and chopped tomato fry till it is mushy.

When it is cool down grind to smooth paste

Heat a teaspoon of oil, add jeera seeds, Wait till it sizzle

Add Chopped Spinach and cook it

Add Grounded Masala paste and all spice powder  and cook for 2 mins

Add cooked Rajma. And mix well. Cook for 5 mins or till All masala blend together

Add Cooked Rice  and mix again

Garnish with coriander leaves. Serve hot with plain rice or even as a side dish for chapati .This curry can be used as side dish to chappathi
