Ridge Gourd Sambar – This is a simple sambar made without dal or tamarind that goes well with idli and dosa. This recipe comes from my cousin and is very simple. I’m always interested in trying new chutneys and sambar for idli/dosa.
If you’re tired of regular Tiffin Sambar, try this one. This is a must-try recipe, especially if you like onions. If you don’t like raw onion, fry it in a teaspoon of oil until transparent and then grind it. Because there is no dal, coconut is required for volume in this sambar and cannot be omitted.
In this recipe, you can substitute mixed vegetables for the ridge gourd. This is a very simple recipe that even novices can try.
Step-by-step instructions to make Ridge gourd sambar:
Step 1: In a blender grind coconut, small onion 1/2 cup and sambar powder into smooth paste with required water
Step 2: Heat oil and add cumin seeds and curry leaves. Let it crackle. Add chopped small onion (I had some chopped garlic too so I hv added that) and fry for 2 mins. Add ridge gourd, salt and turmeric powder, water and close the lid to cook it
Step 3: Add grinded paste and mix well. Cook again. Once start boiling switch it off. Add coriander leaves
Serve hot

Fry the onions before grinding masala. this will give different taste to sambar
You can add mixed vegetables instead of ridge gourd
you can add tomatoes
Since Coconut is added this will not last longer you should finish it soon
