Romali Roti

I love romali roti. Initially I thought doing it at home is difficult. But sometime ago I came across video by vahchef. It is pretty easy to do it. It comes out pretty good. Key is to make the dough correctly. It goes well with lot of gravy. I served this with Malai kofta.

Ingredients:

Wheat Flour – 1 Cup
Maida / All purpose flour – 1 Cup
Salt per taste
Water to knead the dough
Oil – 4 teaspoon
Rice flour for rolling roti
Flour for dusting

Method

In a wide vessel,sieve both the flour and salt.

Slowly add water and mix with the flour to make a pliable dough. Add 2 teaspoon of oil and make it to soft dough. Keep the dough for 1 hour (cover with wet cloth). Divide the dough equally (make sure u have evensize balls)
Take 2 balls at ta time. Roll each balls into small roti. Apply oil on the top of each roti. Dust it with rice flour on the oil side. Combine the 2 rotis by placing the rice flour side touching each other. Roll this into thin roti. It has too be very thin.

Heat flat tawa / griddle. Tawa has to super hot. Now place the thinly rolled roti on super hot tawa and turn to other side when u see bubbles (Bubbles will appear fast. so you need to this very fast). Cook the otherside same way (till bubble appears)


Once Cooked remove it from tawa. When it is warm, slowly separate the two rotis. 

  Fold it in triangle shape and serve hot with your favourite side dish

    Did you try to fling it up in the air, restaurant style ?:D I have always wanted to do that and throw it at somebody I am mad at! lol.. Jokes Aside. Your Rumali rotis look beautiful and the best part is they are not all maida too! Will learn to make this:)
