I kind of like Saffron however my husband does not (maybe husband and wife meant to have different taste?) I wanted to make rice with it for quite some time. I wanted to make simple fried rice at first instead of biryani.. If my kids like this then I can move on to do Biryani. I have used all the vegetables and Cashew. But you can add your favourite vegetable or just with cashew. I have added Milk for soaking Saffron but you can use hot water and add coconut milk while cooking and Ghee for seasoning you can use oil. If you are using oil then reduce the chilli
Ingredients
Basmati long grain rice – 1 cup
Oil or Ghee – 2 teaspoon
Shai Jeera – 1 teaspoon
Turmeric powder – 1/4 teaspoon
Saffron – 1/4 teaspoon
Milk – 2 tablespoon (Hot milk)
Water to cook rice
Salt to taste
Spring onion – 1/2 cup (chopped)
Mint leaves – 5 (finely chopped)
Cinnamon – 1 inch
Bay Leaves – 1
Coriander Leaves/ Cilantro – 2 tablespoon (finely chopped)
Mixed Vegetables – 1.5 cup
Green Chillies – 2 to 3 (adjust to your spice level)
Method:
Cook Bastmati rice with 1.5 cup of water and keep it aside
Boil Milk and add crushed saffron to it. Keep it aside. Heat oil/ Ghee in a pah. Add Bay leaves, cinnamon, shai Jeera and let it cracke or become soft. Add Green chillies, Turmeric powder. vegetables (except Capsicum). Add water and salt,
Let it cook till 1/2 done Add Capsicum cook for a min add Soaked Saffron. Mix well
Let it cook till 3/4th. Add Spring onion. Check for spiciness (if needed pls. add pepper powder for spiciness).
Add Cooked Rice, Mix well Add Coriander leaves. Switch it off
Serve hot
