Sambhariya Rice is a delicious one-pot rice dish loaded with coriander (Cilantro) leaves and fresh shredded coconut. I enjoy experimenting with different one-pot meals, especially for our Sunday lunch. because it is a quick and nutritious recipe My neighbour used to send me rice (especially when my mother was sick). It tastes like coconut rice with lots of vegetables.
It also contains far fewer spices, particularly garam masala (like Cinamon, cardamom, bay leaf, etc). However, I’m not sure about the name. They were Gujaratis. So I googled “coconut rice with vegetables” and ended up here. I roughly followed the recipe from there, making changes based on our family’s preferences.

Ingredients for making Sambhariya Rice:
- Mixed vegetables – 1.5 cups
- Cooked rice – 2 to 2.5 cups (I have used brown rice)
- Salt to taste
- Coconut -1/2 cup
- Coriander leaves -1/4 cup
- Dill / white sesame seeds – 1 tablespoon
- mustard seed – 1/2 teaspoon
- dry red chili – 1-2
- curry leaves – few
- Turmeric powder -1/2 teaspoon
- Chili powder – 1 teaspoon
- Oil – 1 tablespoon (I have used coconut oil)
Step by step instruction to make Sambhariya Rice:
Step 1: Heat the pan with oil. Add mustard seeds, dill, red chili and curry leaves. Let it crackle. Close it with lid so that mustard not goes out of pan
Step 2: Add vegetables except peas, turmeric powder, chili powder, Coriander leaves with salt.
Step 3: Cook it till 3/4th done. Add Peas. mix it well. Add coconut mix well. cook for a min.
Step 4: Add cooked rice. Mix well. Adjust salt. Rice is ready

Notes
- you can replace brown rice with your favorite rice
- Don’t reduce amount of Coriander leaves/ coconut
- I prefer this combo of vegetables if you want to use capsicum and other seasonal vegetables go ahead
- I prefer coconut oil for this
- Good for beginners in cooking
- You can make use of left over rice
