Kootanchoru recipe – Rice recipe – Lunch box recipe – Vegan one pot meal

Kootanchoru – When I was a small kid we used to play with other kids in our street. every one of us brings one thing from each of our houses and we put together to make kootanchoru. Kootanchoru means a mix of everything together. It is simple but very tasty. It has been a while since I made this. I had some vegetables left in the fridge so I wanted to finish it up. The addition of raw mango enhances the flavor. I didn’t add as my sons don’t like it

Ingredients
Rice – 1 cup (I have used normal cooking parboiled rice)
Dal – 1/2 cup
small onion – 2
tomato – 1
Tamarind – small marble size (make tamarind water)
Salt to taste
Turmeric powder – 1/2 teaspoon
Mixed vegetables – 2.5 to 3  cup (Drumstick, cluster bean, white pumpkin, raw banana, Ladies finger)
coriander leaves – 1 tablespoon
 
To grind
 
Red chilies – 3-4
Garlic – 3 pods
Small onion – 10
grated coconut – 4 tablespoon
cumin seeds – 1 teaspoon

To Temper

Oil – 2 tablespoon
Mustard seeds – 1/2 teaspoon
Urad dal- 1 teaspoon
asafoetida / hing – a generous pinch
Curry leaves

Method:
 
Grind all the ingredients under to grind section. 

In a pressure pan add 4 cups of water & add all the ingredients including ground paste. under the ingredients section. Mix well.

Cook till 3-4 whistles. 

When it is ok to open the lid open it carefully and mix it. Heat oil add mustard seeds let it pop add urad dal curry leaves and let it brown it add asafoetida.
Mix it to rice with coriander leaves.  mix well

Serve hot
