One of the simplest recipes is sweet and spicy noodles. These Vegan Sweet, Spicy Noodles are inspired by Southeast Asia. They’re the ideal combination of sweet from the sugar and spicy from the gochujang. Noodles do not have to be unhealthy; it is all about the quantity of noodles used in the recipe. My youngsters recently like any food with a South East Asian flair. Because kids prefer noodles, I make it at least once a week for dinner. I cook it with a lot of vegetables and fewer noodles. I also like to switch from conventional starchy noodles to more multi grain or protein-rich noodles. You can experiment with different combinations to discover the ideal one.
I used Knife Cut noodles in the video for this dish and unfortunately lost the finished photos. So the final image features a variety of noodles. You can use regular maggie noodles or other noodles you have on hand. Make sure not to overcook the noodles in this dish. The crisper the noodle, the better it tastes. So I took it out after 3/4 of the way through.
Mixed vegetables – 1 cup (Broccoli, Capsicum, Mushroom)
knife pare noodles – 200g
Garlic – 5 pods (peeled, finely chopped)
Light soya sauce – 2 tablespoon
Step by step instruction to make sweet and spicy noodles
Heat sugar, Water, gochugaru, Vinegar, salt & Gochujang. When it is boiling and turn little thick add chili oil. Keep it aside
Cook the noodles per instruction and keep it aside
Heat oil in a pan. Add garlic and fry till slight brown. Add all the vegetables, Soya sauce and salt. Let it cook
Add Cooked noodles and prepared sweet and spicy sauce. Mix well
Noodles ready to be served!

Adjust gochujang / sugar per your preference
You can add pan fried tofu at the end to increase protein in the dish
You can just add Mushroom to the noodles
