Sweet Pongal is one of my husband’s favourite dishes. This recipe is made with coconut milk to enhance the flavour. As I’ve mentioned in previous Pongal recipe posts, I’m not a big fan of Pongal from my childhood. However, now that I’m married, I make Pongal at least once a month for my husband. Kesari, Sweet Pongal is his go-to dessert at all times. Aside from traditional Indian sweets such as Badusha, Ladoo, and Jangiri.

 

 

I wanted to try something different for this year’s pongal. So I decided to experiment with coconut milk. The addition of coconut milk improves the flavour (confirmed by my family). My grandmother still makes Pongal in a brass pot because she dislikes the taste of pressure cooker Pongal. I usually make the pressure cooker version, but when I was in India a month ago, I tried the brass pot version, and it definitely tastes better. I’ve used moong dal, but my grandmother prefers chana dal. You can substitute chana dal for moong dal.

 

This recipe be can be easily converted to Vegan Just replace Ghee with odourless oil or vegan butter.

Ingredients for making Sweet Pongal with coconut milk

 

  • Raw rice – 1/2 cup
  • Moong dal / split yellow dal – 2 tablespoon
  • Ghee – 1 tablespoon (or as you need)
  • Cashew nuts – 1 tablespoon
  • raisin – 1 teaspoon
  • Coconut milk – 3/4 cup (Thick milk)
  • Jaggery – 3/4 cup
  • Cardamom powder – 1/4 teaspoon (missed to mention in video title)
  • Water – 1.5 cup
  • Salt a pinch

Step by step instruction to make Sweet Pongal with Coconut Milk

 

Step 1: Heat ghee and fry nut, raisin till it is brown and raisin puffed up. Take it out (including ghee)

 

         

 

Step 2: In same pan roast Rice, Dal. Add water

 

       

 

Step 3: pressure cook with pinch of salt and 1.5 cup of water till 3 whistle

 

        

 

Step 4: Once you are able to open the lid mash cooked rice. and add jaggery, coconut milk , Cardamom powder. Cook till mixture get thicker

 

                

 

Step 5: Add fried nuts and required Ghee

 

       

 

Step 6: Once done switch it off and enjoy!

 

Notes

 

  • You can replace Moong dal with Chana dal
  • Don’t add more dal
  • you can replace 50% of Jaggery with raw sugar or regular sugar if you are not a big fan of Jaggery
  • My sis says sweet Pongal tastes good the next day
  • My aunt eats sweet pongal with Lemon pickle (I never tried)

Ingredients
