Mushroom! One of the must have vegetables for my kids at least once a week. My kids love it in any form. Mushroom is so high in protein.. When I cook mushroom dishes with fresh mushroom esp it stays crisp after cooking and less black part at the center. Even though my kids like all type of mushroom I always use button mushroom in my cooking. In this rice I have added carrot while grinding masala. It gave a slight sweet taste to the rice.
Ingredients
White Button mushroom – 350 g
Tomatoes – 2
Carrot – 1/2 (medium slice it into 1/4 inch pieces)
Onion – 1 (slice thinly)
Garlic – 5 (chopped finely)
Ginger – 1 inch (chopped finely)
Green chillies – 4-5 (adjust to spice level)
Red chilli powder – 1/2 teaspoon (optional)
Turmeric powder – 1/4 teaspoon
Coriander powder – 1 teaspoon
Gram masala powder – 1/2 teaspoon
Salt to taste
Coriander leaves – 1 tablespoon
Mint leaves – 10 leaves
Basmati rice – 1.5 cups
Oil – 3 teaspoon
Cloves – 2
Star masala – 1
Bay leaf – 1
Cinnamon – 1 inch
Method:
Wash and soak bastmati rice for 15 mins. Drain the water and keep it aside. Add teaspoon of oil. When it is hot add garlic, ginger fry till Garlic is slight brown. Add tomatoes, green chillies. Fry till tomatoes are mushy
Add carrot and mix well. Fry for 2 mins. Add salt, gram masala, corinader powder, turmeric powder mix well. Fry for another 3 mins. Switch it off and let it cool down. Grind to smooth paste with 1/2 cup of water
Add 1 teaspoon of oil and add mushroom. Fry with salt till it is fully cooked. Keep it in high flame so that extra moisture gets absorbed. Keep it aside
Add rest of oil. Add Cloves, cinnamon, star masala, bay leaf and fry till nice aroma is released. Add onion and fry till transparent.
Add grinded masala. Fry till oil separates from it ( I have added more chilli powder as the the spiciness was not enough for me).
Add rice and mix well. Add 3 to 3.5 cups of water (you start with 3 if you need more add more while cooking or adjust based on your rice) , salt, mint leaves. Mix well. Close the lid and cook it. When 3/4th cooked add mushroom and mix well. Cook the rice till fully done
Add coriander leaves. Mix well. Serve hot
