Veg Meatball pasta – healthy and tasty pasta I hear you asking meatball without meat? Yes but in this, you will not miss meat at all. During my growing up days, I am not exposed to pasta till I am in Singapore (after my marriage). My mum does maggie once in a while. Nowadays she has learned to make super delicious pasta. I have referred to many blogs for the recipe in the end I have come up with my own. The combination of Mushroom, chickpea really makes it high in protein. you can make the mixture the previous day or leave it in the fridge for 5-6 hrs. This can be served with your favorite pasta. I have served with spaghetti. This is perfect for the kids or teenage kids
Ingredients for making Veg Meatball pasta
For Meatballs
- Mushroom – 250g
- cooked chickpeas – 1 cup
- Onion – 1/2 (finely chopped)
- garlic – 1 tablespoon (finely chopped)
- Quick-cooking oats – 1/2 cup
- Parsley – 1 tablespoon
- pepper powder – 1/2 teaspoon
- olive oil – 1 tablespoon
- Oregano – 1 teaspoon
- Mixed Italian spices – 1 teaspoon¨
- bread crumbs – 1/4 cup
- paprika – 1 teaspoon (adjust to your spice level)¨
- Cheddar cheese – 1/4 cup¨
- Butter – 1 teaspoon¨
- salt to taste
For Sauce
Pasta sauce – 250g
Tomato puree – 100g
Tomato paste – 2 tablespoon
Mixed Italian herb – 1 teaspoon
Garlic – 1 tablespoon (finely chopped)
Olive oil – 1 tablespoon
Carrot – 1 (chopped)
Parsely – 1 tablespoon
For Serving
Spaghetti – 1 pocket
Butter – 1 teaspoon
Steps by Steps for making Veg Meatball pasta:
Let’s do the Meatball Heat a teaspoon of oil. Add garlic, onion, salt fry till transparent.
Add pepper powder, mixed Italian herbs, Oregano. Mix well. Add chickpea. Mix well. Remove it let it cool down
Grind to a coarse paste Keep it aside
Heat rest of oil. Add mushroom. cook till slight brown. Add butter. cook for 3 more mins in low flame
Add grounded paste, quick-cooking oats, pepper powder, paprika, oats, bread crumbs. Mix well. Adjust salt if needed. cook for another 2 mins
adds cheese mix well. Switch it off. Let it cool down. make small ball. keep it in the fridge for 5-7 hrs
Preheat oven at 180 degrees. Take small lemon size balls and arrange it in a baking tray (lined with a baking sheet).
Bake it at 180degrees for 10-12 mins or till sides are browned. Remove it and keep it aside
Cook spaghetti/pasta as per instruction. Reserve cooked water for the sauce
Let’s do the sauce. Heat oil, add garlic. Fry till slight brown color. Add carrot, salt and fry for a min
Add tomato puree, Tomato paste, Pizza sauce required water/ vegetable broth or cooked pasta water. Add mixed Italian spices and mix well. Let it cook for 5-7 mins. Add meatballs and cook for another 2 mins. Add parsley & switch it off
Let’s Assemble. Heat Butter and add cooked pasta mix well. Take a serving plate and arrange pasta/ spaghetti pour meat sauce on top.
