vegetarian minestrone soup with pasta recipe

Whenever I want to have something light or days I want to just go with soup the soup that comes to my mind is minestrone soup with pasta. It is good for dieters. It is quite filling and can be a full meal by itself. Whenever I visit US and craving for hot food most of the time I end up having minestrone soup. For the whole bean you can use any whole bean most of the time I use Rajma however this time I forgot to soak it so ended up using black eye bean. Enjoy the soup!
Ingredients:


Mixed vegetables – 1 cup ( Carrot, beans, cauliflower, potato. you can add whatever you like)

Black eye beans / rajma (kidney beans) / White channa or chick peas – 1/2 cup
Tomato – 3 (medium size)
Onion – 1
Garlic – 4
Celery leaves – 2 stack
Pasta – 1/4 cup
Oil – 2 teaspoon
Salt to taste
Pasta – 1/4 cup
Pepper powder – 1 teaspoon



Method:


Soak the dry beans overnight and cook with salt. Keep it aside. 

Cook the pasta per instruction on the pack keep it aside. Cook the vegetable with salt and keep it aside

Heat the oil in the kada. Add onion and fry till they are soft. Add garlic and fry till garlic is brown in color. Switch it off. Blanch tomato and remove the skin. Grind Onion, garlic and tomatoes together ( I grind onion because of my son. If you are ok just grind the tomatoes). Heat the kada. Add grinded paste and fry for 30 sec

Add enough water. Add cooked cow peas and vegetables. And pasta. Mix well. Add Chilli powder, Celery leaves ad pepper. Let it boil for another 5-7 mins. Switch it off and serve hot

Enjoy it! I can have this as a meal it self. It can be good starter or meal for dieters
