Risotto is one of favorite Italian recipe. When I visited Italy a few years ago I tasted one of the best risotto. In most restaurant base recipe they do add white wine. So I thought without that it wouldn’t taste so nice. So I kind of dropped the idea of doing at home. But When I visited my friend’s place for dinner she served homemade risotto and it tasted so good. And she told me it is more of vegetable stock she used not white wine. So I decided to get it a try. This is a super-rich dish
Ingredients:
Onion – 1 (white. Finely chopped)
button Mushroom – 250g (finely chopped)
Garlic – 5 pods (finely chopped)
Vegetable stock – 3 – 5 cups
Arborio rice – 1 cup
Butter – 1 tablespoon
Parmesan – 2 – 4 tablespoon
Parsley – 1 tablespoon (for garnishing)
Chives – 1 tablespoon (for garnishing)
Method:
Heat half of the butter and add garlic, onion fry for 2 mins. Add mushroom. Continue to cook for 3-5 mins
Add Rice and vegetable stock (Adjust stock if need more) cook till rice is fully cooked
Now add remaining butter and Cheese. Mix vigorously to get the creamy texture. This process is called mantecare. Add Spring onion mix well. Garnish with chives/ Parsley
Serve hot!
