Watermelon Granita Recipe

I am not a very big fan of icy icy dessert. When I was carrying my 2nd son I was craving for dessert with ice. From there onwards I love to have dessert which are more icy desserts. Fruits which are high in water content are good for making granita. Sometime I get very very sweet watermelon. So whenever I get those variety after making juice for kids I will do Granita. Of all I love watermelon granita.
Ingredients:


Chopped watermelon – 4 cups
Lemon juice – 2 teaspoon to 1 tablespoon ( depends on your taste and sweetness of watermelon. Mine was very sweet so I have added about 1 tablespoon of lemon)
Powdered Sugar – 1 tablespoon
Mint leaves – few (optional)

Method:


Cube the watermelon and make juice using food processor or blender. Strain to get clear juice . 

Add lemon juice, chopped mint leaves, sugar. Mix well. Pour it in freezer safe container.

Freeze it for 1 hour. Take out and scrap the sides with fork and freeze it again. Scrap using fork again and freeze it for 6 hours or overnight. When you are ready to serve scrap the granita with fork 

Serve immediately
