Any Indian blog will not be complete without biryani rice. So here you go…This recipe I learnt from my mum. Her recipe call for full coconut instead of mixing with soya milk. I substitute the Coconut milk with Soya in 50: 50 ratio. Rest is exactly same.. I find my kids prefer this also. I use whatever vegetable available for this recipe. It is very good for weekend lazy lunch recipe. It is simple yet it will make satisfying meal experience for sure!
Ingredients
Basmati rice 1 cup
Cut (into 1 inch) vegetables (peas, beans, carrots, cauliflower) 1 cup
Ginger garlic paste 1 tablespoon
Onions 1 big size cut lengthwise
Green chillies 5-6 depending on spiciness
Cashewnut 5, Poppy Seeds – 1/2 teaspoon, Fennel seeds – 1 teaspoon soak all this three for 1 hour and grind to paste together with Green Chillies
Mint – 8-9 leaves – optional
Lemon juice from half a lemon – optional
Coconut milk 1/2 Cup
Soya Milk 1/2 Cup
Water 1 1/4 Cup
Bay leaf 2
Cinnamon 1 inch stick
Cloves – 3
Cardamom – 4
Red Chilli Powder – 1 teaspoon
Gram Masala Poweder – 1/4 teaspoon
Oil (butter makes the biryani taste even better) – 3 tablespoon
Ghee / Butter – 1 tablespoon
Bread slices – 4 (cut into smaller squares)
Cashewnut – 10 Break into half
Method
Wash basmati rice and drain. In a Kadai heat 1/2 tablespoon of butter. Add basmati rice and sauté till rice stops sticking to the spoon i.e. Till the wetness goes off.
This will take 2-3 minutes. Keep it aside
In the same Kadai, add oil (or 1 tablespoon butter). Add bay leaf, cinnamon stick, cloves, cardamom one by one. Fry till nice aroma comes
Add onion. Fry till it becomes translucent. Add ginger garlic paste. Fry for another 1 min.
Add the cut vegetables and grinded cashewnut paste.
Fry till vegetables are 1/2 cooked. Add Chilli powder and gram masala powder. Cook for another 5 mins.
Add Soya Milk, Coconut Milk, 1 1/4 cup water and mix it well Add Mint leaves. Let it boil. Add rice.
Allow the mixture to come to a boil.
Pressure cook this gravy till 3 whistles.
If you have rice cooker, it is super convenient Cook it in mixed rice cooking option (if that is not available use normal rice cooking option).
Heat rest of oil in the kada
Fry Cashew nut (the that is break into halfs) till brown in color and keep it aside
In the same oil fry the bread till it is brown in color and crispy
Once rice is done mix the fried cashew and bread and mix it well
