My mum always do Ridge gourd peel thogayal / Chutney. This is one of my favourite (surprised that is not on my space yet.. will post soon). When I make this at home my kids and my hubby doesn’t eat much. I wanted to make as fried rice to see whether they find this out. I have added milk while making gravy but you can replace it with coconut milk. I love both the flavours. Everyone loved it and they didn’t find it out. Perfect way to include less favourite vegetable into your kids lunch / dinner
Ingredients:
cooked bastmati rice – 3 cups
Ghee /Oil – 1 tablespoon
Cinnamon – 1 inch stick
Cloves – 2
Cardamom – 2
Kal pasi – 1 pc
Bay leaf – 1
Cashew nuts – 1 tablespoon
salt to taste
Curry leaves – 10
Red chillies – 2 (optional)
Garlic – 10-5 (small variety)
Shallots – 10 (slice thinly. I have made it big so that my son can remove it)
Coconut milk ./ Milk – 1/2 cup
For Gravy:
Ridge Gourd peel – from 2 medium ridge gourd
Bengal gram dal – 1 tablespoon
Tamarind – 2 teaspoon (thick)
Salt to taste
Green chillies – 3
Coriander leaves – 1/4 cup
Oil – 2 teaspoon
Grated coconut – 1/4 cup
Method:
Heat 2 teaspoon of oil. Add green chilles and bengal gram fry till slight brown color. Add Ridge gourd peel.and Tamrind. Add salt and cook it.
Add Coconut, coriander leaves and continue to cook for 2 mins.Switch it off and let it cool down.
Grind Ridge gourd peel. Heat Ghee/Oil, Cinnamon, Cardamom, Cloves, Curry leaves, cashewnuts, Kal pasi fry till cashews are slight brown color.
Add Onion and garlic. Fry till slight brown color. Add grinded paste.
1 cup of water and 1/2 cup milk. Continue to boil till paste is thick
Add cooked rice and mix well. Cook for another 2 mins in low flame
Rice is ready. Serve hot!
