Turmeric Vegetable Biryani recipe – One pot meal – rice recipes – party recipes



Are you one of those crazy biryani folks? After trying out Vegetarian Rendang I wanted to try out fresh turmeric recipes. Recently, I met few colleagues who were having turmeric every day (yes, just 1 teaspoon of turmeric mixed with water). They are very content with the medical benefits it brings. I was talking to them about turmeric being used in Indian food. They packed half a kg of fresh turmeric powder with them. Coming back to this recipe, I was a little worried about the strong taste of fresh turmeric so I have decided to make as biryani. It came out very nicely so I will try Turmeric rice, soon. 

Ingredients:


Seeraga samba – 1 cup
Mixed vegetables – 1.5 cups
Coriander leaves – 1 tablespoon
Ghee – 2 teaspoons ( you can substitute with oil is you want a vegan recipe)
Onion – 1/2 (chopped finely)
Tomato – 1/2 (chopped finely)
Ginger – 1/2 teaspoon (chopped finely)

For Tempering:

Shahi Jeera – 1 teaspoon
Cinnamon – 1 inch
Cardamom pods – 2
Stone flower – few
bay leaf – 1 or 2

To Grind (Paste 1)

Onion – 1/2 (chopped finely)
Garlic – 4-5 pods (Chopped finely)
Fresh Turmeric – 2 teaspoon (peel and chopped)
Dry red chilies – 3 -4 (Adjust to spice level)

To Grind (paste 2)

Grated fresh coconut – 1/4 cup +1 tablespoon


Method:

Wash and soak rice for 10 mins. 
Grind all the ingredients under To grind (paste 1) keep it aside

Grind coconut with 3 tablespoon of water and keep it aside

Heat ghee/ oil. Add Shahi jeera, Cinnamon, Cardamom, Stone flower and bay leaves. Fry for 30 sec. Add onion, Salt and ginger fry till transparent

Add tomatoes and fry 30 sec. Add grinded paste. Mix well Fry till ghee/ oil separates

Add Mixed vegetables and mix well. Add required salt too. Add grinded coconut mix well. Add Peas and mix well

Add 2.5 cup water let it boil. Add Rice and close it with lid Reduce the flame completely till rice is done. You can cook in pressure cooker too. If you are using pressure cooker cook till 2 whistle (cook in medium flame) 

Once done open the lid and add coriander leaves and mix well

Serve hot
